CUMIN AND CORIANDER POTATO PATTIES – Aloo Tikkiya
In India, these snacks also called bread cutlets are sold as streetfood. Many cinema goers come out of the theatres after watching a Bollywood Blockbuster and indulge in these scrummy savoury treats served with a spiced tomato ketchup.
Serves 4
3 slices white bread
200g floury potatoes, peeled and boiled
100g peas, defrosted
1 onion, finely chopped
½ tsp ground coriander
¼ tsp salt
¼ tsp chilli powder
¼ tsp ground cumin
5cm/2in piece root ginger, peeled and grated
A few coriander leaves, finely chopped
4 tbsp sunflower or vegetable oil
Soak the bread in a bowl of cold water for 5 minutes.
Squeeze out as much of the water from the bread as possible.
Place it in a bowl with the potatoes, peas, onion, ground coriander, salt, chilli powder, cumin, ginger and coriander leaves and mix and mash together with a wooden spoon.
Wet your hands slightly and roll the potato mixture into 12 balls of equal size, then flatten them until they are about 1cm/½in thick. Heat the oil in a frying pan over a medium heat. Add as many potato patties as will fit and fry them for about 4 minutes, turning once, until golden brown and crisp on both sides. Remove from the pan, drain well on kitchen paper. Serve hot with cumin ketchup.
CUMIN KETCHUP
1 tsp ground cumin
8 tbsp tomato ketchup
2 tbsp olive oil
¼ tsp chilli powder
½ tsp black pepper
Juice of ½ lemon
Stir together all the ingredients in a bowl, and serve with the Cumin and Coriander Potato Cakes.
